​Field Visit - FSEC 310: Nutrition Security Assessment and Intervention Strategies 

AUB students enrolled in FSEC 310: Nutrition Security Assessment and Intervention Strategies made a field visit with Action Against Hunger to the Bekaa Valley (Baalbek area) in August 2018 to learn about nutrition assessment programs for refugees. Students had a chance to conduct baseline surveys and meet focus groups among the Syrian refugees. ​

​​Ms. Hannah Nicholso​n Thesis Experience in Jordan

​​​​​Holding a bachelor’s degree in nutrition with specific interest in preserved food, Ms. Hannah Nicholson is now pursuing her master of science in food security at the American University of Beirut (AUB). Throughout the past two years living in Lebanon she has come almost daily across the old food tradition produced in rural Lebanon involving the annual processing of fruits, vegetables, herbs, flowers, and animal by-products, the “mouneh”. Her interest grew in this class of foods and she began to wonder at their nutritional and personal value to those producing them. Advised by Dr. Martin Keulertz, she began her thesis research in Jordan this summer term. Hannah is using the household food security analysis tool Food Insecurity Experience Survey (FIES) alongside additional questions about the impact of production of traditionally preserved foods on household nutrition.

Field Visit - Food Security and RCODE Students to Chouf Area​

AUB students enrolled in ​FSEC 305: Agriculture: Technology, Supply Chains, Sustainability visited the Chouf area of Lebanon as part of an outreach activity of the arranged by Dr. Shady Hamadeh in an effort to visit different local community development projects. The first project visited was implemented by Secours Islamique France (SIF), which provides humanitarian assistance to vulnerable communities. Students met with small-scale farmers and discussed the advantages and disadvantages of the project, including: that the municipality distributes organic waste to those who have chicken, but not all residents have space for this waste; everyone produces and sells eggs, making the business less profitable. The second project visited was initiated by local women entrepreneurs and aims to start​ a small business by selling local produce "mouneh." Read more.

Field Visit - FSEC 315: Food Policies and their Planning Process 

In April 2018, AUB students enrolled in FSEC 315: Food Policies and their Planning Process​ visited Orient Farms in South Lebanon to explore the agriculture production status and development within the current agricultural policies in Lebanon. Guided by Dr. Martin Keulertz, students also had a chance to visit one of the large supermarkets in the Sibline area that deal with the World Food Programme (WFP) provide debit-card assistance to Syrian refugees. Students explored the current use of this support system guided by the supermarket owners.
